A Recipe From My Sicilian Friend

lipareseWhilst writing ‘The Sicilian’s Proposition’ I asked my Sicilian friend, Salvatore, about various Sicilian foods. He gave me this recipe for a meal called, ‘Pasta Liparese’. In the book, Dante takes Joanne to a restaurant on the Island of Lipari so she can try the meal. It’s a night when something special happens but the same night, a murder occurs…

 

Ingredients: 300 gm:  1 can of tuna in oil, 50 gm: pitted black olives. 1 clove of garlic, 1 tablespoon of salted capers, 1 bunch of parsley, extra virgin olive oil, Salt and pepper.
Method: Add pasta to boiling salted water and boil the pasta al dente.
Meanwhile, when the pasta is cooking, prepare the dressing. Rinse the capers, chop together with the garlic, olives and half of parsley. Pour oil in a pan, add the chopped olives, parsley, capers and garlic and sauté over medium heat, stirring, add to the mixture a few tablespoons of cooking water of the pasta and cook for a few minutes, also add the tuna drained and season with salt and pepper. Drain the pasta and pour into a large bowl, season with tuna sauce and warm olives, sprinkle with chopped parsley, stir to mix the seasoning and serve immediately.

Heat to boiling salted water and boil the pasta al dente.
